Shepherds Pie

My English husband love Shepherd’s Pie. I make one that’s pretty basic. I saute some onion and garlic in some olive oil and then add about one pound ground lamb. See the links for the Santa Fe local lamb or you can get it at La Montanita Coop. While the meat is cooking I cut up some patatoes into 1 inchish cubes. I leave the skins on because its quicker, healthier and gives it a rustic flare.

When the meat is done I might add some tomato sauce depending on what I feel like. When the patatoes are soft I whip them with some butter and milk. Season to taste. then its just a matter of layering the meat on the bottom and the patatoes on top. Cook the whole thing in the oven at 425 F or until the top is brown and crispy. Easy and great comfort food.
